“Canada’s Chef Tawnya Brant Praises Hidden Gem Pawpaw Fruit”

In Canada, the pawpaw fruit, with its tropical essence, is a hidden gem according to chef Tawnya Brant. Describing it as a blend of banana, mango, and pineapple flavors with a creamy texture that turns caramel-like when ripe, Brant, a Mohawk chef, emphasizes the uniqueness of this fruit.

Pawpaws, native to North America for centuries, were once prevalent across several states before being displaced due to land clearing for agriculture. Despite their rich history, pawpaws remain relatively obscure partly due to their short shelf life and susceptibility to bruising, making large-scale commercialization challenging.

Thomas Mathias, a farmer in Ontario, experimented for over a decade before successfully cultivating pawpaws. His unconventional method of using llama manure to aid pollination led to a bountiful harvest. Mathias, alongside his sister Beth Secord, now produces hundreds of pounds of pawpaws annually, garnering increased interest in the fruit.

Brant, who hopes to eventually incorporate pawpaws into her culinary creations, stresses the importance of savoring this seasonal delight. She envisions a future where more people can experience the unique taste of pawpaws, possibly through local markets or festivals. As she nurtures her own pawpaw trees, Brant eagerly anticipates the day when she can share this “treasured little gift” with a wider audience.
