Tragic Pancake Contest Death at University

A pancake-eating contest at Sacred Heart University in Connecticut, organized by a sorority to raise funds for Prevent Child Abuse America, took a tragic turn for 20-year-old Caitlin Nelson. Despite the seemingly harmless nature of the event, Caitlin, a social work student, experienced a medical emergency after consuming several pancakes rapidly during the competition on March 30, 2017.

Witnesses reported that Caitlin began shaking uncontrollably and collapsed to the floor. When police arrived, she was found unresponsive and not breathing. Tragically, Caitlin passed away three days later at Columbia Medical Center in New York due to irreversible damage caused by a lack of oxygen.

Although Caitlin had known food allergies, a coroner determined that choking was the cause of her death. A subsequent wrongful death lawsuit filed by her mother, Rosanne Nelson, revealed that concerns had been raised about the safety of the pancake-eating contest due to the thickness of the pancakes, yet the university had still approved the event.

This heartbreaking loss compounded the Nelson family’s previous tragedy, as Caitlin’s father, James, had lost his life during the September 11 attacks while assisting people at the World Trade Center. Despite the adversities, Caitlin was remembered as a compassionate individual who dedicated her time to mentoring children affected by the Sandy Hook school shootings, earning her the title of a hero.

Following Caitlin’s passing, a large on-campus vigil honored her memory, attended by numerous individuals touched by her kindness and story. Her mother later dropped the lawsuit against the university after reaching a settlement in 2020. Both the family’s legal representatives and the university have refrained from commenting further on the matter.
